    Am I alone when I say I'm freakishly nosy about what people eat for dinner? No? Phew, good, I thought so. Since cutting out all red meat, and poultry meat six months ago, dinner time can be a bit challenging. Not only do I have to be creative, I have to please the taste buds of two others. As anything, it's all been a game of trial and error. We play around with ideas, draw inspiration from Pinterest and communicate with one another ideas of how to better something.

    Stephanie and I both love cooking and wanted to share 5 of our favorite dinners for today's collaborative serious, The Friday Post. See what Stephanie's cooking here!! My dinners are meatless, and centered around those 9 to 5-ers. Whom after sitting in a half hour of traffic, have little to no desire to cook some banging meal for their family, let alone themselves. My meals are simple, tasty, and cooked in 45 minutes or less!

Buffalo Cauliflower Flat Breads

    One of the quickest meals to date. Buffalo humus and chopped cauliflower on a wheat flat bread with some shredded cheese and an additional dash of hot sauce on top. These take about 25 minutes to bake in the oven, and wah-lah, dinner is served. 

Zucchini and Butternut Squash Quesadillas with Cilantro Lime Rice

    A quick Google search will give you all you need to know to make a copycat Chipotle cilantro lime rice. In our household, it's a total staple, and something we eat multiple times a week. It works as a great side to almost any Mexican dish. Zucchini and butternut squash is super easy to come by this time of year and the local farmers markets always have massive ones for dirt cheap! 

White Quinoa Burgers with veggies and mac and cheese

    This is another one of our go-to quick dinner meals. These white quinoa vegan burgers are delicious and cook really well on our panini press. We love to eat them on ciabatta or pretzel bread served with a side of steamed veggies that I steam in this cool do-hickey. Instead of cheese or mayo, my condiment of choice is humus. We always have a million flavors in our fridge to choose from. Pictured above, is cilantro humus. The classic Mac and cheese is total evidence I have a two year old. 

Spinach and Pesto Penne

    Who doesn't love pasta?! One of the best go to quick meals for us is pasta. Creativity is limitless with pasta dishes; we're always coming up with ways to jazz it up. I love taking a tomato basil sauce, cooked spinach, Italian seasoning, pesto,  some sun dried tomatoes, and mixing them all together on the stove top for a delicious pasta topper! 

Pinto bean Taquitos

    We love Mexican in our household, but just your standard taco can get old real quick. While browsing Pinterest, Chicken taquitos seemed to pop up more than any other Mexi-inspired meal. Now I'm one of those people who takes an idea, and molds it to fit our specific tastes and makes it work. I blended up some pinto beans, red pepper humus, cumin, cilantro, and white rice and rolled them tightly into flour tortillas. As they baked on 350 for 25 minutes, I took Greek yogurt, lime, salt, and cilantro and whipped it into a cool dipping sauce. These were a huge hit and even my carnivore sister had seconds.
