Since it's been less than sunny in the heart of it all, this week's dinner musings reflected how we were feeling. After all, what's better than a creamy, cheesy casserole on a dull day?
Easy Cheesy, Zucchini Rice
2 cups of rice
1 block of your favorite melty cheese, I used cheddar
a splash of almond milk
shredded chicken (optional)
lemon, pepper, salt, parsley, garlic to taste
I'm not going to lie, when the idea crossed my mind I had every intention of using broccoli, but we had three very large zucchinis in the fridge nearing their expiration. So I chopped them up in a sloppy manner, and tossed them into the food processor. Joshua isn't a zucchini fan, but I can mince up just about anything he "doesn't like" and he'll eat it. I know, I'm a genius.
Minute rice is totally your friend on nights you're feeling less than creative. It's ready in ten minutes (boiling and all) and makes great sides, or in this case, a full meal.
During the mincing/ boiling process, the oven was preheating to 350 F. Not for any reason other than to melt the final cheese layer and to give it some warmth.
Once my rice was cooked to my liking, I dumped it into a mixing bowl where I added my zucchini, spices, almond milk, and cheese I had melted in the microwave. Score another for lazy mom.
Chicken is totally not necessary. If I were making this for myself that much could have been left out. To satisfy the man in my life, I just added some shredded chicken and gave everything a nice mix.
Everything then went into an 8 x 8 metal making pan and was finished off with a light sprinkle of mozzarella cheese. I left it in the oven just over five minutes. In less than a half hour, we had a delicious, comforting casserole to warm up our chilly day.
