Tasty Tuesday: Pumpkin GnocchiOctober 14, 2014
Say you get off work late, and no part of you is into cooking some elaborate family pleasing meal. When nights get hectic and time is crunched, you start to make a list of all the things you can put off until another day.
"Well, maybe I'll shave my legs tomorrow."
"The laundry can wait until the weekend."
"The sink isn't that full of dishes."
Today's Tasty Tuesday meal is something you can enjoy on a week night and still get all those things accomplished. With three easy ingredients and literally two dishes, you have no excuses. And girl, don't put off shaving those legs!

1 pack Pumpkin Gnocchi (World Market)
1/2 jar pumpkin spaghetti sauce (Pumpkin Chipotle Sauce from Aldi)
1/2 cup goat cheese
Like every yoga pants wearing, Starbucks toting thirteen year old, I love Fall and everything that comes with it. Including all things Pumpkin. (Sick of hearing that by now?). I knew this dish would be a taste bud pleaser that even Joshua's picky palate would enjoy.
Bring a pot of water to boil. Add 1 package of Pumpkin Gnocchi, or any kind that you prefer. Allow Gnocchi to boil about 5 to 8 minutes. If you over cook it, it will be chewy.
To avoid more dirty dishes, carefully use a fork to drain the water from the pot containing the gnocchi. Add your desired amount of sauce, we used half a jar, and place the pot on simmer. Be sure to stir frequently to avoid burning. After about 5 minutes your sauce should be nice and hot. Portion into a bowl and garish with goat cheese. Enjoy!
Maybe goat cheese scares you, and that's ok. I like it because there's such a contrast in flavor with the Pumpkin sauce. If goat cheese isn't your thing, use Parmesan. (:
