Tasty Tuesday: Pumpkin Dessert

Pumpkin is everywhere this time of year. From cakes to shakes, to pastas and bakes, you can incorporate it almost anywhere. Traditional Pumpkin pie has always been a cult favorite of mine. A few years ago my family came up with this little twist that turned an old favorite into something new and refreshing. Go ahead, impress your family at Thanksgiving this year!



Pumpkin Dessert (serves 12)
30 oz. solid pack pumpkin
24 oz. evaporated milk
4 eggs
1 1/2 cups sugar
2 tbsp flour
1 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
1 box white or yellow cake mix
3/4 cup butter

Instructions:
Mix pumpkin, milk, eggs, sugar, flour, salt , cinnamon, nutmeg, ginger, and cloves.
Pour into 9 x 13 baking dish
Bake at 400 for 15 mins. 
Turn down to 350 
After an additional 15-20 mins check to see if pumpkin is done
Cut butter into cake mix 
Remove pumpkin from oven and add cake mix. Make sure the cake mix is crumbly or it will stick together. 
Return to oven for 20 mins. or until a toothpick comes out clean.
Do not over cook or it will be far from edible!
Serve with lots of whipped cream goodness!
